Daddy: Are you sure?
Josh: (shakes his head no)

Daddy does only what a parent would do and takes a sniff.

Cinnamon Bun Pancakes

Since my friend Vertigo B turned me on to these pancakes 2 weeks ago, I've made them 4 times. They've become the staple Saturday morning breakfast. This morning, Gabby asked if we could have them on Sunday mornings too. I guess she really likes them. Anything with frosting must be good, right?

The above photo is not mine. I couldn't grab my cell phone fast enough to snap a picture of my pile of pancakes. Imagine if you will 3 sets of grubby, icing filled hands (because they couldn't keep their hands out of the frosting before the pancakes were served) grabbing each and every last one of the yummy cinnamon disks. So thank you Pioneer Woman for the beautiful photo.
Now, down to business. Here's what you've been waiting for. The recipe. You better make 2 batches of the frosting...I'm talking from experience here.
Cinnamon Bun Pancakes
1-½ cup All-purpose Flour
3 Tablespoons White Sugar
½ teaspoons Salt
4 teaspoons Baking Powder
1 Tablespoon Cinnamon
2 whole Eggs Beaten
1 cup Milk
2 Tablespoons Corn Syrup
¼ cups Butter, Melted
1 Tablespoon Vanilla

Preparation Instructions
In medium bowl, combine flour, sugar, salt, baking powder and cinnamon with a whisk. Whisk well to make sure everything is combined. In separate large bowl, beat together eggs, milk, corn syurp, butter and vanilla. Stir in flour mixture.
Heat a lightly oiled griddle or frying pan over medium/low heat. Pour about 1/4 cup batter onto griddle. Brown on both sides.
Serve warm with icing drizzled over the top.

Maple Butter Icing
1 cup Powdered Sugar
¼ cups Butter, Melted
Dash Of Salt
1 Tablespoon Maple Syrup
¼ cups Whole Milk (more If Needed)
Preparation Instructions
Whisk all ingredients together until smooth, adding more milk as needed.

Baking for Me

These days, I find myself baking for friends, events, activities, bake sales or class parties but never just for me. Today, I found myself longing to bake just for me and the kids. So, I spent my morning in the midst of vanilla daisy cupcakes and my Demarle mini muffin pan.

I'm totally in love with my newest cupcake decorating purchase. I know it's funny to be in love with a kids decorating kit but I am!

Williams-Sonoma has this wonderful kit for kids. But it works great for adults too. I'll never buy another decorating bag again. Truly wonderful! What's also great is that it's made standard to fit all decorating tips! So, the 150 Wilton tips I have will NOT go to waste!

The kids are thrilled these cupcakes aren't being taken anywhere. They get to enjoy every last one of them!

Birthday Planning

Gabby is 100% interested in making lists...especially lists about birthday presents. The next person in our family to have a birthday is Daddy and so, she's completely obsessed with making sure he has a present to open on his special day.

And by the looks of things, she's got her Daddy figured out.

Happy Birthday Papa!

Happy Birthday to my Dad. The man who always makes me feel like a million bucks, even when circumstances are far from a million bucks. To my Dad who loves my kids and his son-in-law like they were his own. To my Dad, who still calls me on the phone just to talk. To my Dad, who will drink a margarita (or two!) with me any day! To my Dad, the man who taught me to never settle for second best, how to balance the computer store budget, and showed me how a husband is supposed to love his wife.
Dad, I love you so much and I wish I was there to celebrate with you today. But hang on just 17 more days and we'll do our share of celebrating! Happy Birthday!
